Thai Green Curry

Santa Thai Green Curry

Serves 4

  • 1 x sweet red pepper
  • 4 x chicken breasts
  • 1 x pack of mixed baby sweetcorn and sugar snap peas
  • 1 x large red onion
  • 20 x cherry tomatoes
  • 1 x red chilli finely chopped
  • 2 x heaped tablespoon green curry paste
  • 1 x stick lemon grass- ends bruised with a rolling pin
  • 400ml tin coconut milk
  • 3 x kaffir lime leaves
  • 1 x tablespoon soy sauce
  • 2 x tablespoons vegetable oil
  • Chopped fresh coriander and fresh basil
Chop the chicken into chunks, and the vegetables into smaller pieces - leave the cherry tomatoes whole - sauté in the vegetable oil - in a large wok.
Add the rest of the ingredients and simmer till for 15 mins
Serve alongside his beard and hair (boiled rice noodles)
Serve topped with chopped fresh coriander and torn basil leaves
