White Chocolate Tray Bake Sliced

White Chocolate and Pecan Traybake

Makes 10 blondies

  • 180g white chocolate
  • 130g Pecan nuts
  • 225g salted butter
  • 225g caster sugar
  • 150g light brown soft sugar
  • 3 x large eggs
  • 2 x tsp vanilla essence
  • 190g plain flour
  • 190g self-rising flour
Preheat the oven to 180c/350f/gas 4
Line a 22cm square cake tin with some non-stick paper
Put the pecan nuts onto a baking tray and bake in the oven for 10 mins
Cut the butter into small chunks and put into a pan along with the two sugars and gently heat till the butter and the sugars melt
Take off the heat and allow to cool slightly
In a large bowl beat the eggs then whisk in the melted sugary butter
Beat in both the flours and the vanilla essence
Roughly chop up the white chocolate and the pecan nuts
Stir them through the cake batter
Pour into the tin and bake for about 40 mins - till risen and golden
Allow to cool - then cut into 10squares

Cook time - 40 mins
