Salmon and Cod Fishcakes
Serves 4
- 150g salmon fillets
- 150g cod fillet
- 500g potatoes
- 1 x tsp dried parsley
- 3g fresh chives
- ½ tsp chilli flakes
- 20g capers
- 50g plain flour
- 2 x medium eggs
- 80g fresh breadcrumbs
- Seal salt and black pepper
Chop the salmon and cod into small chunks and add to the hot mashed potato and mix well
Then chop the chives and capers finely
Add this to the fish fix along with the chilli flakes and the dried parsley - season with some salt and pepper and fix well
Divide into 8 and roll into balls - flatten slightly to make cake shapes - allow to cool
Then whisk the eggs - dip the fish cakes first into the flour, then the egg wash and then the breadcrumbs
Chill for 15 mins
Fry them in the oil on both sides for about 7 mins - transfer to the oven to keep warm while cook the rest
You can also make 4 x large fishcakes instead of the 8 - these will take longer to fry - about 15 mins each side
