Boxing Day Beefburgers

Serves 4

  • 225g sirloin steak
  • 225g rib eye steak
  • 225g rump steak
  • 100g leftover sage and onion stuffing
  • 80g leftover mixed cheese from the cheeseboard
  • 20g salted butter
  • 50g tomato salsa
  • 50g cranberry sauce
  • 4 x burger buns
  • Lettuce, tomato, red onion to garnish
  • Sea salt and black pepper
  • 1 x tsp paprika
Trim any excessive fat off the steaks and mince coarsely in food processor
Mix with stuffing, season with some sea salt and black pepper and divide into four
Roll into balls – then flatten into patties
Mix the salsa and cranberry sauce together
Grate the cheese and mix with the butter and season with the paprika - divide into four pats
Grill or griddle the burgers
Top with a pat of cheese
Grill the cut side of the burger buns
Stack the burgers with lettuce, sliced tomato and red onion - drizzle with the cranberry salsa and serve
