Kale Bread

Makes 1 loaf

  • 100g Curly Kale
  • 200ml boiling water
  • 1 x 7g sachet yeast
  • 325g strong white flour
  • 40ml olive oil
  • 1 x flat teaspoon celery salt
  • 1 x flat teaspoon ground black pepper
  • 10g caster sugar
Put the flour, yeast, sugar, salt and pepper into a large bowl and mix well
Put the kale into a food processor and pour over the boiling water - process till the kale is well chopped
Put this in with the flour mixture along with the olive oil and mix well
Turn out onto a floured surface and knead well for about 7 mins
Put back into the bowl, cover with a tea towel and put somewhere warm to prove for 45 mins
Turn out the dough and knead again for about 5 mins
Shape into a ball
Put into a bowl, cover with some cling film and allow to rise again for another 25 mins
Preheat the oven to 190c/375f/gas5
Transfer the loaf carefully to a greased baking tray
Bake in the oven for 30/35 mins - till lightly browned
Turn out onto a rack to cool

Prep time - 15 mins
Proving time - 85 mins
Baking time - 35 mins
